Any of the mushrooms in these recipes can be mixed or matched depending on your tastes. However, keep in mind that oysters won’t hold up on a grill because of their delicate nature.

Creamy Gruyère and Mushroom Dip
Ingredients
Method
- Preheat oven to 375°F (190°C).
- Sauté mushrooms in butter over medium heat until softened (~5 min). Add garlic and cook for 1 more minute.
- In a bowl, mix Gruyère, cream cheese, sour cream, mustard, salt, and pepper. Stir in mushrooms.
- Transfer to a small baking dish and bake for 15 minutes until bubbly.
- Sprinkle with thyme and serve warm with crackers or crusty bread!

Grilled Wine Cap Mushrooms with Herb Butter
Ingredients
Method
- Preheat grill to medium-high heat.
- Brush mushrooms with olive oil and season with salt & pepper.
- Grill for 4-5 minutes per side, flipping once.
- In a small bowl, mix butter, garlic, parsley, and thyme.
- Remove mushrooms from grill and immediately brush with herb butter. Serve warm!

Swiss & Cheddar Mushroom Egg Bake
Ingredients
Method
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Sauté onions and mushrooms in butter for 5 minutes until softened.
- In a bowl, whisk eggs, milk, salt, and pepper. Stir in cheese and mushrooms.
- Pour mixture into baking dish and bake for 25-30 minutes until set.
- Garnish with chives and serve warm!

Sautéed Oyster Mushrooms for Steak

Method
- Heat oil and butter in a skillet over medium-high heat.
- Add oyster mushrooms and sauté for 4-5 minutes until browned.
- Stir in garlic, Worcestershire sauce, salt, and pepper. Cook for 1 more minute.
- Sprinkle with parsley and serve over steak!

Chicken & Mushroom Soup (Shiitake & Chestnut Mushrooms)

Method
- Heat olive oil in a pot over medium heat. Sauté onions, carrots, and mushrooms for 5 minutes.
- Add garlic, thyme, salt, and pepper. Stir for 1 more minute.
- Pour in chicken broth and bring to a simmer. Add shredded chicken.
- Simmer for 15-20 minutes. Stir in heavy cream (if using).
- Serve warm with crusty bread!

Mushroom & Beef Stew

Method
- Heat oil in a large pot over medium-high heat. Brown beef for 5 minutes. Remove and set aside.
- Sauté onions, carrots, and mushrooms for 5 minutes. Add garlic and tomato paste.
- Stir in flour and cook for 1 minute.
- Return beef to the pot, add broth, thyme, salt, and pepper. Bring to a simmer.
- Cover and cook for 1.5 to 2 hours until beef is tender. Serve hot!

Mushroom & Chicken Kabobs (Shiitake & Wine Cap Mushrooms)

- Preheat grill to medium-high heat.
- In a bowl, mix olive oil, balsamic vinegar, garlic powder, paprika, salt, and pepper. Toss with chicken and mushrooms.
- Thread chicken, mushrooms, bell pepper, and onion onto skewers.
- Grill for 10-12 minutes, turning occasionally, until chicken is cooked through. Serve warm!

Philly Cheesesteak with Mushrooms (Oyster & Chestnut Mushrooms)

Method
- Heat olive oil in a skillet over medium-high heat. Sauté onions and mushrooms for 5-6 minutes until caramelized.
- Remove from pan and set aside. Add steak to the skillet, season with salt & pepper, and cook for 3-4 minutes.
- Return mushrooms & onions to the pan, mix, and top with provolone cheese. Cover for 1 minute until melted.
- Load mixture into hoagie rolls and serve hot!
